Por wine house is looking for an experienced, forward-thinking Kitchen Chef who is passionate about culinary arts. The ideal candidate for this position will be a natural leader who always has a finger on the pulse of what is happening in their kitchen. The Chef will be able to delegate tasks to kitchen staff, prepare meals for our diners, interview and train staff, kitchen inventory management and partner with the Sous Chef to come up with delectable new dishes to add to our nightly special menu. Responsibilities
Setting up the kitchen with cooking utensils and equipment, like knives, pans and food scales
Studying each recipe and gathering all necessary ingredients
Cooking food in a timely manner
Delegate tasks to kitchen staff
Inform wait staff about daily specials
Ensure appealing plate presentation
Supervise Cooks and assist as needed
Slightly modify recipes to meet customers' needs and requests (e.g. reduce salt, remove dairy)
Monitor food stock and place orders
Monitor food and labor costs
Manage relationships with distributors and resolve issues with vendors promptly
Follow the budget established by the restaurant manager
Maintain the schedule for kitchen staff
They should be familiar with sanitation regulations.
Ensure safety and sanitation practices in the kitchen
Check freshness of food and discard out-of-date items
Ensure compliance with all health and safety regulations within the kitchen area
Requirements
Proven work experience as a chef or line cook
Hands-on experience with various kitchen equipment (e.g. grillers and pasta makers)
Advanced knowledge of culinary, baking and pastry techniques
Leadership, communication and organization skills
Ability to remain calm and undertake various tasks in a fast-paced environment
Excellent time management abilities
Up-to-date knowledge of cooking techniques and recipes
Familiarity with sanitation regulations
Culinary school diploma preferred
3+ years' experience as a Chef in a full-service restaurant
2+ years' experience in a supervisory role
