Reviews menu and special orders to determine types and quantities of food items to be obtained and prepared.

Follows standardized recipes in preparation of all foods.

Plans cooking schedule with supervisor and/or dietitian to ensure food will be ready at specified times.

Ensures that all foods prepared meet existing standards for quality, freshness, taste and appearance.

Confers with dietitians regarding modified diet preparation and use of leftovers.

Adheres to HACCP guidelines in the food storage, handling and preparation and in the sanitation and maintenance of work area.

Ensures that all cooking equipment and utensils are inspected and maintained for cleanliness and proper operation.

Alerts supervisor to problems and needs concerning equipment and food supplies. Detects and reports spoiled or unattractive food, defective supplies/equipment or other unusual conditions.

Education:

High school diploma or equivalent preferred.

Certifications:

None required.

Complexity of Work:

Requires the ability to work with minimal supervision

Must be able to work in a stressful environment and take appropriate action.

Work Experience:

Sufficient previous experience in large scale food preparation; two or more years related experience preferred.

Knowledge of cooking methods/procedures, including types of preparation and related routines.

Training in institutional food preparation preferred.

Physical Requirements:

Regularly required to stand, walk, use hands to manipulate objects for tools, reach with hands and arms, stoop and lift or move objects up to 75 pounds.

Position requires normal or corrected vision.

Personal Protective Equipment:

Follows standard precautions using personal protective equipment as required.
