The Sommelier is responsible for performing beverage service while assisting the rest of the service and management team in the dining room. This includes leading the service team in beverage recommendations, sales and execution of proper wine and beverage service. The sommelier will also participate in wine and agave list maintenance, beverage inventory, beverage receiving/stocking, maintaining the proper wine and agave inventory levels, and staff training. We recognize that our wine and spirits program is a crucial facet of our operations: as an integral component of our cuisine and as an enhancement to our guests’ experience, as a vital component to our revenue, and as a statement of who we are.Key Responsibilities:Daily OperationsGreet guests in a positive, friendly manner with eye contact and intentionCommunicates the needs of guests to co-workers, kitchen, and managementActively participate and contribute to pre-shift meetings including communicating new products, and training on wine/spiritsHas complete knowledge of all food menu items, specifications, and allergiesDisplays a mastery in understanding and exceptional communication of the wine list, agave list, and cocktail offeringsForms, grows, and maintains relationships with guests for repeat businessConsistently follow sequence of service utilizing all proper procedures standardized by the room managementParticipate in a regular inventory for all beverages and suppliesUpdate inventory locations and bin labels whenever wines are movedEliminate waste by monitoring employees on pour levels and proper storageSet-up and train employees on wine, agave, beverage service, and knowledgePeriodically lead and host wine and agave related classesEnforce proper beverage service standards of all employees during serviceMaintain clean, error-free beverage lists by constantly updating and reprintingCheck-in warehouse and direct beverage orders.Input all invoices from warehouse and direct beverage orders on the day the wine is receivedCompare warehouse invoices against the previous night’s sales to ensure all proper beverage was ordered and correct any errorsReturn/exchange any beverage where a warehouse or direct beverage order error has occurredStock wine prior to and after servicePrepare and stock agave cart prior to and after serviceSet-up and break-down all by-the-glass and wine pairing areasPrior to service, organize all event wines that are expected to be served during the service periodAssist with placing beverage orders at the end of service or by a specified time during serviceWork closely with the Beverage Manager to ensure the organization and maintenance of wine service spacesAssist with programming and format bin numbers and wine information into the POS systems accuratelyRequired to attend regular group meetingsAssists with moving chairs and tables as needed based on the floor planResponsible for performing table maintenance by checking on the guest throughout serviceCompleting opening and closing side workMaintaining health code standardsMaintain table cleanliness utilizing a silent service approachBid farewell to guests, using guest’s name when known, and encourage them to returnMaintain a level of professionalismAnticipate the guests’ needs and respond appropriately with a sense of urgencyWork as a team, assisting all guests’ and employees’ needs and inquiries.Perform all other job-related duties as requestedBe familiar with all Hotel services/ features and local attractions/ activities to respond to guest inquiries accuratelyMaintain working knowledge of designated glassware and garnishes for each drinkComplete opening, closing, and ongoing side duties, not limited to fold/stack napkins, polish glassware, stock glassware, restock supply cabinets and service stations, clean and inspect cleanliness and condition of assigned station and service areas; rectify any deficienciesGuest Services:Ensure guest has same elevated experience in lounge as in dining roomAdapt to different guests as lounge will be for guests dining as well as those coming to enjoy the atmosphere for cocktailsCompany and Department Responsibilities:Work varied shifts, including weekends and holidaysRequires the ability to work efficiently and within a team environmentMust be able to obtain and maintain any licensing or active work cards required, at present or in the future, for this position at all timesExperience in Bottle service preferred, but not requiredConsistently deliver exceptional service to every guest while interacting and entertaining in a professional mannerMaintain a clean and hygienic workstation in accordance with Clark County Health StandardsAbility to initiate and maintain an upbeat and relaxed environment on a consistent basisAdhere to and enforce company specific safety policiesMaintain dialogue with all guests while upholding a warm, positive and friendly persona at all times
