This person should be an inspiring coach, a team leader, and very persistent about the making of exceptional italian foods for our beloved clientele example; bread and pasta doughs, dessert doughs, dessert creams, gelati, sauces, dressings, braised meats a variety of seafoods and regional classics. Cured meats as well. Someone curious. Someone brave. Someone with vision about their future. Italian experience is a huge plus. Pasta making is a huge plus.
