Communicates changes to other supervisors and managers.Ensures kitchen sanitation standards are maintained, recipes and production sheets are followed, and food and refrigerator temps are taken and recorded per departmental and regulatory agency policies and procedures.Delegates responsibilities, monitors performance, and holds employees accountable for maintaining departmental and regulatory agency standards (temps., portions, accuracy, presentation, sanitation, service, etc.) in the kitchen and in dining rooms.Completes opening and closing checklists, prepares residents meal tickets, add-ins and discharges, and monitors and holds employees accountable for timely and accurate delivery of meals via tray-line or dining room.Performs other duties, as assigned.
