Key Responsibilities

The Pastry Lead at Gracie’s is a key position on the Culinary Team. Working closely with our Executive Chef, the Pastry Lead is responsible for the organization and day-to-day production of Gracie’s Pastry /Dessert menu. The ideal candidate possesses an immense passion for plated desserts and its techniques. This person will contribute to and carry out the creative vision of the Pastry team and Gracie’s mission statement. We are looking for a year commitment plus from any candidate.

Above all, the Pastry Cook is expected to foster a positive working environment, help create genuine guest experiences, and a memorable working and dining experience.

Key Responsibilities include, but are not limited to:

-Participate in creative conversations in menu development, future improvements, and goals in an open forum.

-Help establish and maintain the daily pars of menu items in order to create consistent desserts.

-Assist in inventory of relevant products and order necessary products to ensure full pars.

-Assist in directing interns and new team members when shadowing in the pastry kitchen or completing working interviews/bench tests.

-Proper usage of Gracie’s equipment and tools, ensuring proper cleanliness, and instructing teammates to do the same.

-Maintain and ensure the cleanliness of kitchen working space both throughout production and daily break-down, in accordance with Rhode Island Health Code and Gracie’s Standards.

-Assist the Executive Chef and Gracie’s Venture leadership team in troubleshooting and correcting any problems relating to the culinary teams or menus.

-Assisting with scheduling the pastry department.

-Communicating to the Pastry team and leadership team about equipment status and keeping up with scheduled maintenance.

Position Type: Full Time

Shift Outlook: Wed.-Sun., Mondays and Tuesdays off, 40 Hour Work Weeks (Ideally)

Performance Schedule: 90-day informal check-in, 6-month discussion opportunity, 9-12 month formal review

$18-$20hr. based on experience

Compensation is determined by experience and performance. Additional compensatory packages and options are at the discretion of the Proprietor and are determined every year. This is a living document; additional responsibilities or modifications are subject to management discretion. Job Descriptions are reviewed annually.
