Job Description
The
EDR Cookworkswith the EDR Manager/Assistant Manager to design weeklymenus,prepare and cook nutritious, well-balanced meals forapproximately 140 staff,and toprovide a pleasant dining experience for all Signal Mountain Lodge staff.ESSENTIAL DUTIES/RESPONSIBILITIES/FUNCTIONS:
- Help plan weekly menus
- Prepare and cook nutritious and well-balanced meals for approximately 140 staff
- Rotate fresh foods daily
- Help clean the EDR kitchen and dining facilities on a daily basis
- Wash dishes, pots and pans, empty garbage,compost,recycle and other similar kitchen duties as assigned
- Follow and maintain proper NPS and PHS sanitation principles and procedures
- Order, receive and check-in deliveries properly
- Put groceries away in proper places indrystoreroom, freezer, and walk-in refrigerator
- Provide high quality meals in a timely manner and in sufficient quantities to all Signal Mountain Lodge staff duringthe scheduled meal hours
- Maintaining a high degree of positive employee morale
- Clean dining room area andcomputer room for Signal staff
- Communicate with the EDR Manager about any broken equipmentor missed food orders
- Create items for General Store Grab N’Go menu
- Successfully completeServSafetraining
- Provide a pleasant dining experience for all members ofthe Signal Mountain Lodge staff
- Complete Signal’s Hazard Communication Program
- Knows and follows all company, Environmental, Health, and Safety Management Programs.
- Works extra shifts and hours as required.
- Assists in other departments as needed.
- Other duties as assigned
Qualifications
- Read, write, speak and understand English effectively.
- Good customer service skills
- Good cooking skills
- The ability to work with minimal supervision and be self-motivated
- Ability to learn all company training materials
- Must have proper food handling or equivalent certification or ability to obtain upon hire.
- Must be able to understand normal conversation and accurately communicate information.
- Ability to stand and walk on paved, unpaved, uneven and sometimes slippery surfaces for extended periods of time.
- Ability to climb stairs occasionally.
- Ability to twist, turn, push, pull, and reach down, forward and overhead repetitively; Kneel, squat, stoop and crouch frequently.
- Ability and manual dexterity to use small kitchen utensils/tools and operate appliances such as mixer, ovens, dishwasher, steamer, flat top, grill, fryer, knives, whisks, etc.
- Must be able to use general cleaning supplies; Grasp, lift, push, pull and use cleaning equipment.
- Ability to lift and carry up to 40 pounds daily.
- Able to work in hot areas of kitchen (around dishwasher, ovens, cooking equipment) and cold areas (walk in refrigerators and freezers).
- High School Diploma, GED, or equivalent, or 1 year of hospitality cooking or related work experience, or equivalent combination of work experience and education preferred.
- Food preparation and food safety knowledge required.
- Prior restaurant experience preferred.
- Culinary degree or related coursework preferred.
